INGREDIENTS

  • 180 Gram lean beef mince (uncooked)

  • 2.5 ml olive oil

  • 2 garlic clove (crushed)

  • 1 Teaspoon cumin

  • 1 Teaspoon coriander

  • 5 Gram red chilli (finely chopped)

  • 70 Gram canned black beans (drained and rinsed)

  • 70 Gram canned corn kernels (drained and rinsed)

  • 120 Gram cos lettuce (shredded)

  • 40 Gram cheddar cheese (grated)

  • 150 Gram cherry tomatoes (chopped)

  • 0.5 lime (2 x wedges)

  • Pinch himalayan salt & pepper

  • 50 Gram avocado (mashed)


METHOD

  1. Heat olive oil in a non-stick fry pan over medium heat and cook the beef mince with garlic, red chili, coriander and cumin for 5-8 minutes or until cooked, stirring occasionally. Season with a pinch of Himalayan salt

  2. Whilst the beef is cooking, divide the corn, black beans, cherry tomatoes, lettuce, cheese and avocado between two bowls

  3. Serve with a lime wedge

  4. Serve one Deconstructed Beef Burrito Bowl and refrigerate the leftover meal for tomorrow's lunch
