INGREDIENTS
2 x 100g salmon fillet
5 Gram ginger (2 tsp, grated)
30 ml reduced salt soy sauce (reduced salt)
5 Gram sesame seed (2 tsp)
200 Gram bok choy (ends trimmed)
200 Gram broccolini
200 Gram chinese cabbage (shredded)
10 ml sesame oil (2 tsp)
1 small red chili, finely chopped
1 garlic clove (minced)
15 Gram cashew (chopped)
METHOD
To cook the salmon, heat a non-stick fry pan over medium heat. Cook the salmon with ginger and half the soy sauce. Cook for three minutes each side or until cooked to liking
Meanwhile, to cook the greens, heat sesame oil in a pan over medium heat. Add the bok choy, broccolini and cabbage with garlic, red chili and remaining soy sauce for four-five minutes or until cooked
Divide greens between two plates and add a salmon fillet to each plate. Top wthe salmon with sesame seeds and sprinkle cashews over the greens
Serve one now and refrigerate one for tomorrow
