GREEN BEANS WITH PORK FILLETS AND AVOCADO

INGREDIENTS

  • 2 cups green beans, ends trimmed

  • 100g raw, pork fillets, fat removed

  • 1/4 cup freshly squeezed lemon juice

  • 1/4 cup avocado, sliced

  • 1 tsp. extra virgin olive oil

  • 1 tsp. oregano

  • 1 tsp. cumin

  • 1 tsp. thyme

METHOD

  1. Heat a non-stick fry pan over medium temperature and cook the pork with oregano, cumin, and thyme for a few minutes on each side or until it's cooked in the middle

  2. Boil water in a saucepan over medium heat and cook the green beans for 5 minutes. Drain the water from the beans and transfer the beans to a bowl

  3. Drizzle the lemon juice and olive oil over the beans. Season with Himalayan salt and pepper. Mix through the avocado and pork fillets

  4. Serve
