INGREDIENTS
2 x 120g red capsicums (Medium)
10 ml olive oil (2 tsp)
1 garlic clove (minced)
60 Gram brown onion (diced)
200 Gram lean beef mince
0.5 Teaspoon dried oregano
1 Teaspoon cumin
1 Teaspoon smoked paprika
150 Gram mushroom (diced)
100 Gram baby spinach leaves
15 Gram tomato paste
40 Gram shredded mozzarella cheese
METHOD
Preheat oven to 180°C and line a baking tray with baking paper
Slice the top off each capsicum and scoop the seeds and core out. Place capsicum on baking tray and drizzle with half the olive oil. Bake for 20 minutes
Meanwhile, heat remaining olive oil in a pan over medium heat. Add onion and garlic and cook until soft. Increase heat to high. Add beef mince, oregano, paprika, cumin, tomato paste and mushrooms. Cook for five-seven minutes or until beef is just cooked. Add spinach and cook until wilted. Season with salt and pepper
Remove capsicums from oven. Divide beef mixture between capsicums and top each with mozarella chesse
Return tray to oven and cook for five-ten minutes or until cheese is melted and golden
Serve one now and refrigerate remaining for tomorrow
